I love homemade soups. My soup recipe changes according to what is available in my fridge. But here is one constant chicken soup recipe that I make. Of course this is Paleofied.
Ingredients
1 whole chicken or chicken breasts/legs with bones
2 cloves garlic, chopped
2" ginger root, chopped and bruised
red pepper, finely chopped
green pepper, finely chopped
2 stalks green onions, chopped and bruised
cilantro, optional
coconut oil
Bok Choy/Napa cabbage
Yu choy /Choy sum (yummiest vegetable!!!)
Spinach, optional
2 stalks of celery, julien
2 sticks of carrots, julien
mushroom, optional
Cooking wine, optional
sea salt to taste
black pepper to taste
white pepper to taste
Water
Steps
1/ Heat coconut oil -- 3 tablespoon is plenty. Saute the following (in sequential order) until fragrant or lightly golden brown -- garlic, ginger,carrots, celery, red and green pepper, green onions, mushroom
2/ If desired, add a dash of cooking wine. Continue to saute and enjoy the aroma
3/ Add chicken meat. Stir until meat change to opaque color
4/ Add water -- amount? depending on how much soup you want to drink. 2 LARGE soup bowls should be plenty. Bring water to boil for a few minutes.
5/ Now add the rest of the vegetables. Cover and simmer. The longer you simmer, the tastier the soup will be
6/ Before serving, dial up your soup taste by adding sea salt, black and white pepper ... amount? depends on your individual taste.
7/ Garnish with cilantro before serving.
